The Centers for Disease Control (CDC) estimates that roughly 48 million Americans contract food poisoning each year, 128,000 of which are hospitalized and 3,000 of which die. The reduction of microbial contamination was a point of emphasis of the Food Safety Modernization Act of 2011 (FSMA), which required many manufacturers to establish “preventative control” systems closely modeled after HACCP (Hazard Analysis Critical Control Points) and increase regular microbiological testing for quality assurance purposes.
