The reduction of microbial contamination was a point of emphasis of the Food Safety Modernization Act of 2011 (FSMA), which required many manufacturers to establish “preventative control” systems closely modeled after HACCP (Hazard Analysis Critical Control Points) and increase regular food microbiological testing for quality assurance purposes.
